Beet juice was the beginning of a love for beets any which way. I believe in trying foods that I’m not too fond of numerous time in any way possible to make sure that I don’t like them. Especially, if I know there are amazing benefits. I did this with mushrooms for 27 years and finally I LOVE them. Next up on my list was beets.
I recently cooked them up for a client and had a few left over so I knew this was the time to try them again. I decided to juice them to help with the texture issues I was having. Let’s just say that was the best decision of my day! Now I am officially in love with beets!
Beets contain a color pigment called betalain which is a powerful antioxidant,anti-inflammatory, & detoxification. They help cleanse your liver & kidneys.
1 large beet, scrubbed & 1/4
2 celery stalks
1 cup red cabbage
- Wash all produce
- Run through juicer
CHEF’S TIPS & TRICKS
- I like to put less yielding produce through the juicer first then follow up with a higher yielding vegetable/fruit after to ensure I get the most juice. For example this juice I put carrots first then followed it with beets.
- Enjoy as soon as possible. Or store in a airtight jar in fridge for up to 24 hours.
