Healthy Chicken Tortilla Soup

Flavorful chicken tortilla soup without any grains or gluten! This easy to make, healthy soup is full of spices, veggies, and lean protein.

Healthy Chicken Tortilla Soup

Gluten-Free | Grain-Free

Ingredients:

  • 2 tablespoons olive oil

  • 1 (353g) white onion, small dice

  • 6 (17g) garlic cloves, minced

  • 2 green peppers (226g), seeds removed, small dice

  • 1 red pepper (134g), seeds removed, small dice

  • 2 (27g) chili peppers, seeds removed, sliced thin

  • 1 tablespoons dry oregano

  • 1 tablespoons cumin

  • 1 teaspoon paprika

  • 2 (14.5oz) cans diced tomatoes

  • 3 quarts chicken broth

  • 1 lb chicken breast

  • to taste salt & pepper

  • Lime, zest & juice

  • Fresh cilantro leaves

Procedure:

  1. Heat a large pot up over medium high heat. Once hot add oil swirling to cover the bottom of the pot. Add onions and garlic. Saute for 2-3minutes or until aromatic. 

  2. Add green peppers, red peppers, and chili peppers. Mix well and cook about about 5 minutes. Then add dry oregano, cumin, paprika, and a large pinch of salt. Mix well.

  3. Add diced tomatoes, and chicken broth. Bring to a boil. Once boiling add chicken breast in. Cook for about 20 minutes or until the chicken is cooked through. Set chicken aside- keep the soup simmering.

  4. Once chicken is cool enough to handle. Shred the chicken (keeping some big pieces). Add back into the soup. Adjust seasoning to taste with salt and pepper. Garnish soup with lime juice, zest, and cilantro leaves.
