Strawberry Spinach Salad

The beauty of this recipe lies in its simplicity. Just toss together baby spinach or your favorite greens with juicy strawberries, sliced almonds, feta cheese, and cucumber, and you've got yourself a nutritious and satisfying salad that's as pleasing to the eye as it is to the palate!

Don’t skip the dressing dressing it’s worth every minute of preparation. With the sweetness of fresh strawberries and raspberries, a tangy kick from balsamic vinegar, and the richness of extra virgin olive oil, it's a symphony of flavors that elevates this salad to a whole new level of deliciousness.

Strawberry Spinach Salad

2 servings

Ingredients

1 (6oz) bag of baby spinach, washed

¾ cup of raw sliced almonds

1 cup of fresh strawberries, washed, hulled and sliced thin

2 Persian cucumbers, chopped or sliced

6 oz crumbled feta cheese 

To taste Salt & Pepper

Berry Balsamic Vinaigrette 

¾ cup fresh strawberries and/or raspberries

1 tablespoon 1 ½ teaspoons balsamic vinegar 

To taste, honey

To taste, sea salt & pepper

¾ cup extra virgin olive oil

Procedure: 

  1. Wash all produce and prepare your produce. Prepare your dressing by adding all ingredients expect oil into a blender or food processor. Run until strawberries are broken down then slowly add in olive oil until fully incorporated. Adjust seasoning to taste with salt and pepper.

  2. In large mixing bowl combine spinach, almonds, strawberries, cucumbers, and feta cheese. Top off with berry balsamic vinaigrette and enjoy!

Pro Tip: It’s best to make these salads in late spring/ early summer when strawberries are in peak season.
