Asparagus Pea Soup 

Ingredients 

2 bunches asparagus, woody ends trimmed

1/2 tablespoon avocado or olive oil

16 oz fresh or frozen peas

1 yellow onion, chopped

3 quarts chicken stock

2 tablespoons sea salt

1/2 tablespoon black pepper

Optional Garnish: Toasted cumin, aleppo, sesame seeds, or nigella seeds

Procedure 

  1. Preheat the oven to 450.

  2. Line a baking sheet with culinary parchment paper or foil, add in a single line asparagus. Season with salt and pepper. Drizzle ½ evenly over asparagus for about 15 minutes. 

  3. Meanwhile, heat up a large over medium heat. Once hot add 2 tablespoons of oil, swirling to cover the bowl of the pot. Add the onions with a pinch of salt, lower the heat and cook until translucent, about 3-5 minutes. 

  4. Pour in the chicken stock and bring to a boil then lower to a simmer for 20 minutes. 

  5. Once asparagus is done, chop into quarters and add to the pot with peas. Turn off heat and let cool.

  6. Once cool, puree in a blender or using an immersion blender. Adjust seasoning to taste with salt and pepper. Garnish with toasted spices, if using and enjoy!
