Black Bean + Quinoa Bowl

Easy and simple weeknight meal.

Black Bean + Quinoa Bowl

Gluten-Free | Vegan

Ingredients:

  • ¾ cup canned black beans, drained

  • 1 teaspoon olive oil

  • 1 teaspoons ground cumin

  • ¾ cup quinoa, cooked in vegetable broth

  • ¼ cup plain hummus

  • ¼ medium avocado, diced or sliced

  • 3 tablespoons Red Pepper Salsa 

  • 2 tablespoons chopped fresh cilantro

  • 1 tablespoon lime wedges & juice

Procedure:

  1. In a medium pot cook quinoa according to the package instructions using vegetable broth instead of water. Once done, fluff with a fork. 

  2. In a large saute pan over high heat, add the oil. Once oil is hot add the black beans, cumin, and a pinch of salt. Continuously toss for a few minutes. Set aside. 

  3. Combine beans and quinoa in a bowl. Top off with hummus, avocado, red pepper salsa, lime squeeze and chopped cilantro.
