Corn & Red Pepper Salsa

An easy, healthy salsa.

Corn & Red Pepper Salsa

Gluten-Free | Vegan

Ingredients:

  • 16 ounces frozen corn, thawed and drained or use 1-2 corn ears, boiled or grilled, cut off the cob

  • 1 red bell pepper, small diced

  • ½  red onion, minced

  • ½  tablespoon extra virgin olive oil

  • 1/4 cup lime juice

  • 1/4 cup fresh cilantro, chopped 

  • ½ teaspoon cumin 

  • To taste salt & pepper

Procedure:

  1. In a large bowl, mix corn, red bell pepper, red onion, lime juice, cilantro and mix well. Season with salt, pepper, and cumin. 

  2. Cover and marinate in the refrigerator for at least 1 hour.
