Corn & Red Pepper Salsa
An easy, healthy salsa.
Corn & Red Pepper Salsa
Gluten-Free | Vegan
Ingredients:
16 ounces frozen corn, thawed and drained or use 1-2 corn ears, boiled or grilled, cut off the cob
1 red bell pepper, small diced
½ red onion, minced
½ tablespoon extra virgin olive oil
1/4 cup lime juice
1/4 cup fresh cilantro, chopped
½ teaspoon cumin
To taste salt & pepper
Procedure:
In a large bowl, mix corn, red bell pepper, red onion, lime juice, cilantro and mix well. Season with salt, pepper, and cumin.
Cover and marinate in the refrigerator for at least 1 hour.
