Another addition to the grain-free collection. This time: grain-free granola!

Grain-Free Granola

Gluten-Free | Grain-Free

Ingredients:

  • 1 cup coconut flakes

  • 2 cups almonds, chopped 

  • 1 ½ cups pecans, chopped 

  • 1 ½ cups walnuts, chopped 

  • ¼ cup chia seeds 

  • 2 tablespoons ground flax seed

  • 2 tablespoons hemp seeds

  • 1 tablespoon cinnamon

  • 1 teaspoon ground nutmeg

  • Pinch of salt 

  • ¼ cup coconut oil, melted

  • ⅓ cup maple syrup 

Procedure:

Preheat the oven to 325. Line a baking sheet with parchment paper and set aside.

In a large bowl combine coconut flakes, nuts, seed, cinnamon, nutmeg, and salt. Mix well- make sure the chia seeds and hemp seeds are well incorporated.

Melt the coconut oil in a small saucepan over medium-low heat. Once melted mix in the maple syrup until well combined.

Pour coconut + maple syrup over the granola mix. Fold in to make sure every piece is coated.

Evenly spread granola mix over parchment line baking sheet.

Bake for about 25-28 minutes or until golden brown. You can flip halfway through- if you don’t you will end up with large granola pieces and that’s totally cool! 😉
