Simple Spring Salad

Get ready to celebrate the flavors of spring with this simple Spring Salad – a vibrant medley of fresh greens, juicy blueberries, crunchy almonds, and crisp cucumber, all topped off with a homemade Berry Balsamic Vinaigrette that's sure to tantalize your taste buds.

Spring Salad

2 servings

6 oz Baby spinach or baby greens like mesclun, butter lettuce, arugula 

1 cup fresh blueberries

¾ cup sliced raw Almonds 

1 cucumber, thinly sliced 

To taste, Fresh cracked pepper

Berry Balsamic Vinaigrette 

¾ cup fresh strawberries and/or raspberries

1 tablespoon 1 ½ teaspoons balsamic vinegar 

To taste, honey

To taste, sea salt & pepper

¾ cup extra virgin olive oil

Procedure: 

  1. Make the dressing: Blend all ingredients in a blender or food processor EXPECT the olive oil. Slowly add olive oil. Season to taste with salt, & pepper 

  2. Mix all ingredients together. Top with berry balsamic vinaigrette
