Spring Salad
2 servings
6 oz Baby spinach or baby greens like mesclun, butter lettuce, arugula
1 cup fresh blueberries
¾ cup sliced raw Almonds
1 cucumber, thinly sliced
To taste, Fresh cracked pepper
Berry Balsamic Vinaigrette
¾ cup fresh strawberries and/or raspberries
1 tablespoon 1 ½ teaspoons balsamic vinegar
To taste, honey
To taste, sea salt & pepper
¾ cup extra virgin olive oil
Procedure:
Make the dressing: Blend all ingredients in a blender or food processor EXPECT the olive oil. Slowly add olive oil. Season to taste with salt, & pepper
Mix all ingredients together. Top with berry balsamic vinaigrette
