Steak Fajita Bowl

Steak Fajita Bowl

Ingredients
3/4 dry cup brown or white rice
2 tablespoons cup avocado or olive oil
12 oz flank steak or steak of your choice
To taste, Sea or kosher salt
To taste, Black pepper
Sauce
2 tablespoons lime, juice
2 tablespoons extra virgin olive oil
1/2 cup fresh cilantro, leaves
1 garlic clove, peeled
To taste, salt
Onion + Pepp
2 bell peppers, sliced
1/2 red onion, sliced
1 teaspoon ground cumin
1 teaspoon crushed red pepper
1 teaspoon paprika
1 romaine heart, washed & chopped
1 avocado, sliced
Additional Pairings: cherry tomatoes, black beans, sour cream, salsa
Procedure:
Cook rice according to the directions on the package.
Heat a cast-iron skillet over medium-high heat. Add 1/4 of the oil. Pay the steaks dry then season with salt and pepper.
Once the pan is hot place the steak in the pan and cook on one side for about 5 minutes then flipping once cook on the other side for about 5 minutes, or until your desired temperature. Remove, let rest for 10 minutes, and then slice against the grain and set aside.
Meanwhile, in a small blended or food processor, add extra virgin olive oil, lime juice, cilantro, and salt and pepper to taste. Process until smooth and set aside.
In the same cast iron pan used to cook the steak, turn the heat to medium and add the onions and peppers. Season with cumin, crushed red pepper, paprika, salt and pepper.
Cook until charred in spots and softened, about 5-8 minutes and then remove and set aside.
Divide the rice and romaine onto plates and top with steak, onion mixture, and avocado. Add the cilantro dressing and enjoy!
Option: Short on time, cook the rice and steak and keep the sliced onion and pepper mix raw, just omit the spices!
