Ingredients
4 servings
1 tablespoon olive or avocado oil
2 garlic cloves, minced
1 white onion, medium chop
2 red peppers, medium chop
2 green peppers, medium chop
2 carrots, sliced
1 14.5 oz can diced tomatoes
1 16 oz can tomato sauce
1 tablespoon tomato paste
2 cups cooked organic corn, optional
2 cups cooked black beans
2 cups cooked kidney beans
1 1/2 tablespoons blend of cayenne pepper, ground allspice, chili powder, crushed red pepper, smoked paprika (blend according to how spicy you like)
To taste salt
Optional-1 cup bulgur, cook according to directions on package in separate pot
Optional Toppings- dairy free sour cream, sliced scallions, tortilla chips
Procedure:
In a large stock pot add oil over medium heat. Once hot add garlic & onions. Cook for about 3 mins (until aromatic)
Add peppers, carrots, cherry tomatoes. Season with spice blend, salt & pepper. Cook for about 5-7 minutes.
Add diced tomatoes, tomato sauce, tomato paste, vegetable broth, all the spices. Mixing well. Bring to a simmer for about an hour and a half. Once vegetables are tender add corn, black, & kidney beans. Mix well and season with salt. Simmer for another 30 minutes. Taste and adjust seasoning with salt.
